Breakfast: Oatmeal with dried banana bits
Lunch: 2 pieces baked parmesan chicken with ketchup
Snack: half a muesli bar
Dinner: Tomato & Mozarella casserole (with olives, carrots & celery)
Half a bucket of popcorn
I am not too satisfied with my casserole. Its not dry, and its tastes all right but I like the overabundance of sauce, so I wasn't too happy with it. Everyone else liked it though and since its almost gone, I don't really have to eat it so much! The muesli bars are proving to be popular as well, though I should have left them in longer. The insides are still very light colored but the outside I thought they might be burnt because it was very dark - plus it said remove when it turns dark - so I did.

Breakfast: Apple & Sultana Oatmeal
Lunch: 1 open faced grilled cheese sandwich with bits of fried garlic from a jar
1 open faced salmon & tapenade sandwich (both sandwiches wholegrain bread)
Snack: 1 vanilla butterscotch type gelato
4 sour cream rice crackers
Dinner: 2 pieces baked parmesan chicken
salad with sweet potato, cherry tomatoes and balsamic vinegar
vanilla ice cream with muesli
Today I decided to cook for the rest of the week. I made muesli bars for snacks/quick brekkie, oven baked parmesan crust chicken w/ basil & olive oil sauce and a tomato mozarella casserole that is large enough to feed a family for the week. My housemates were quite excited cos it means they get to eat, too.
The pictures below are of the muesli, on the left and of dinner on the right. My housemate Lisa made the salad.
